This very unusual hexagonal cheese takes it’s name from the term once used to describe the heir apparent to the throne of France. Made from local cow’s milk by Fromagerie Guilloteau in the scenic hills of the Rhône Valley, it’s silky texture is created using a unique combination of modern ultra-filtration techniques, slow overnight lactic fermentation and a careful selection of traditional surface moulds.
